Known for “Torinabe” (chicken hot pot), the dish was introduced from the mainland as a type of medicinal cuisine. It’s said that the founder, Jisaku Honda, developed the modern form of *mizutaki* in Fukuoka. When mizutaki was introduced to Tokyo, it was decided that “if multiple chefs prepared it, the taste would vary,” so only one chef was entrusted to make it as the signature dish. That unique flavor has been passed down through generations, and to this day, a single dedicated *mizutaki* chef preserves its traditional taste.
